Bribe Cookies

We call these cookies Bribe Cookies because they are quick, easy, and very safe to make. Always turn out good and a perfect chocolate treat to whip up when you want to thank someone or bribe them to do something (especially your boy- or girlfriend ;)). So today, when we had a very nice visitor come over and amazingly shorten all of our curtains perfectly (go moms who know how to sew!) we quickly got together the stuff to make bribe cookies and had them out and waiting as a thank you when she got there.

These cookies are chocolaty and not very dense...inside is much more like cake than a normal cookie. They do not take much to make. Only:

1 cup butter or margarine
1 1/2 cups sugar
2 eggs
2 tsp vanilla
2 cups flour
2/3 cup baking cocoa
3/4 tsp baking soda
1/2 tsp salt




We did not have cocoa (and we used up the only fake substitute cocoa we had last time we made chocolate cookies) so we had to work around it. It is possible and doesn't hurt the cookies at all. Instead of cocoa, substitute 1 ounce (30 g) of unsweetened baking chocolate for every 3 tbs of cocoa powder. In this case, we used about 4 ounces because we wanted it extra chocolaty. Since chocolate has more fat in it than cocoa you must reduce the recipe by 1 tbs of butter for every 1 ounce of chocolate substituted (about 3 tbs here).



Besides the substitutes we made the recipe is very easy. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. It is here where we added the chocolate after melting it in a double boiler on the stove. Then add flour cocoa (if you are using it instead of chocolate), baking soda and salt. Mix well. 



 
Cover and refrigerate for 1 hour... (do you see the cabbage?! it is still there from our okonomiyaki... we don't know what to do with it?! :P) or until easy to handle (we were in a hurry so we only refrigerated the dough for about 15 minutes and then just made sure to wet our hands before rolling the cookies into balls because this will keep them from sticking. Roll into 1-in. balls.  Bake at 350 F (175 C) for 8-10 minutes (ours took 11 minutes) until they do not look too shiny and the edges are firm.

 




These cool off very quickly so you don't have to wait to serve them.

  1. These looked so delicious I had to try making them! But I put chocolate chips in the batter to make them even more chocolate :)

  3. I made them last night and they were just as delicious as you said they would be! I wanted to try them both ways, so I split the batter in two and but extra chocolate chips in half. I liked both of them, but I think the original recipe was my favorite.
