Devil's Food Cake
This cake is chocolate to the extreme. Eat it with icing or turn it into an Oreo Cake. If you are not a complete chocaholic serve it with vanilla ice cream to mellow the chocolate flavor.
Makes one 9" x 13" cake or two 9" round cakes:
2 cups flour
1 tsp salt
1 tsp baking powder
2 tsp baking soda
3/4 cup unsweetened cocoa powder
2 cups sugar
1 cup vegetable oil
1 cup hot coffee
1 cup milk
1 tsp vanilla
Preheat the oven to 325 F (162 F)
Sift together the dry ingredients in a large bowl.
Add the vegetable oil, coffee and milk. Mix on medium for about two minutes.
Add the eggs and vanilla and continue to beat for another two minutes. The batter will be very thin - DO NOT WORRY :)
Pour into one greased 9" x 13" cake or two greased 9" round pans. The cake will take about 45 minutes to bake but it is a good idea to start checking after 30 minutes for how done it is.
Remove from the oven and let cool for 15 minutes before removing from the pan.
Serve with frosting or turn it into an Oreo Cake.
